 Pumpkin Cookies with Cinnamon Cream Cheese Frosting We seem to have serious criminal activity going on at home - I made two batches of these delightful Pumpkin Cookies this weekend and they have DISAPPEARED! I thought I noticed a few missing as I turned my back after taking a fresh pan from the oven, but by the time they were frosted with silky Cinnamon Cream Cheese Frosting, they were flying out of my kitchen like a magic show! I can't say that I blame them, these are the perfect little cookie to enjoy on a crisp autumn afternoon. And there have been serious comments made about how much these taste like homemade Pumpkin Roll - and these are so much easier and faster to make!
To create the perfect pumpkin cookie, I cream fresh butter with a mixture of both granulated sugar and brown sugar. If you have homemade pumpkin puree on hand, that's a wonderful thing, but you can also use canned pumpkin to save time and energy - just make sure to use pumpkin puree and not pumpkin pie filling! Add perfect Fall flavor with fragrant Rodelle Vanilla Paste (you can also use vanilla extract) and Rodelle Pumpkin Spice extract. The earthy autumn spices of cinnamon, nutmeg, cloves and ginger complete the mix, making for not only perfect taste, but perfect SMELL as these delicious little cookies are baking! When these are baking, they smell better than any candle, and your whole house will smell SO GOOD! It's no wonder that they are disappearing! These Pumpkin Cookies are gloriously soft, light, fluffy, flavorful cake-like cookies that melt in your mouth cookie after cookie after cookie…and that's before they are even frosted! The Cinnamon Cream Cheese Frosting takes these cookies to a whole new level. Its gloriously silky and full of cinnamon flecks and flavor. I sprinkle the tops with addtional cinnamon or pumpkin pie spice - you could also sprinkle with cinnamon sugar. This creamy cinnamon-infused cream cheese frosting is also perfect on pumpkin, banana or spice cupcakes, muffins and cakes as well! And now, I'm off to find that cookie thief!
