So many recipes I made thru the years have powdered sugar in the crust, but I used granulated sugar to give this more of a shortbread texture and flavor. Perfect! The filling is also a lot thicker and more generous than you typically get with a lemon bar - but let's face it, don't we all want MORE of a creamy, tart and sweet lemon filling? Another trick is to sprinkle the powdered sugar on just before you plan on serving. The moistness of the raspberry lemon filling will "melt" the powdered sugar if you sprinkle it on too early! Perfect on a spring or summer day....perfect anytime! But kicking up your feet and enjoying one of these in the sunshine just feels like summer - warm and happy! Hope that you enjoy as much as we do!
