 Pecan Brittle So this weekend I've been putting the final touches on the list of goodies and treats to be included in my holiday gift boxes this year...and I just had to share this wonderful and easy recipe with you all! If you love Pecan Brittle, you will adore this! Even my little ones that aren't crazy about pecans are addicted to this! And believe it or not, 15 minutes and a microwave are all that are standing between you and a batch of this snappy and crunchy Pecan Brittle! With this fabulously easy method there is no madness, just perfect Pecan Brittle every time!  Holiday Pecan Brittle I start with roasting the pecans - it only takes a few minutes, but my oh my, what a difference it makes! This Pecan Brittle just tastes more "pecan-ey" and rich than anything you have ever had before! The brittle itself is just simple ingredients - sugar, corn syrup, vanilla and butter. And this is the lightest, crispiest brittle ever! Loaded with a million golden bubbles, and so light and crisp - perfection!
And as wonderful as this is to put on a cookie or sweet treat plate for Christmas, you'll be amazed by the other crazy-good things you can do with it! Broken into smaller pieces, you can use it in cookie dough for some of the best English Toffee Cookies EVER! Or sprinkle it on top of a scoop of Butter Pecan ice cream!
