These may be one of the most popular Christmas cookies, and found on just about every Christmas Cookie plate - but have you ever picked one up to eat and it was too crisp and not at all what you were expecting?
These are tender, chewy cookies - and best when warm out of the oven (just ask my kids). I have a hard time hiding enough to make it through the holidays!
I have made these a half dozen different ways through the years, but this is hands down the best version and technique that I have found.
We like our cookies puffy, tender and chewy - not flat like pancakes! Another secret is to use a little bit LESS cookie dough than what you might think. The cookies will spread a little bit while baking, and you don't want your Hershey Kiss looking lonely in the middle of a big ole' cookie!
The secret is to chill the dough overnight - which melds the flavors and oils together, and makes for the best cookies. Also, the little bit of cornstarch keeps the cookies chewy and soft.
You might as well go ahead and make a double batch of these - they will go FAST! Hope that you love as much as we do!
