 Fresh Peach Salsa with Blue Corn Tortilla Chips It's always a little bit sad when summer starts winding down - we always started school the Tuesday after Labor Day when I was a kid, so these mid-August start dates are just downright cruel! Back to school shopping is done, crayons and markers packed in backpacks, and I'm starting to get back in the mindset of packing lunches again. Summers are just so much lazier and better! We all ended up on the deck tonight, which is always a relaxing way to end the day and start the weekend. Perfect time to whip up some summertime Peach Salsa! Fresh peaches add just a touch of sweetness to the mix!  This Peach Salsa takes about five minutes to chop up and put together! Fresh tomatoes, sweet bell peppers, cilantro and jalapenos from the garden, chopped up quick, and drizzled with a quick squeeze of fresh lime juice - it all is so fresh and good right now that I didn't even need to add salt and pepper! This is one recipe that really only works well with fresh ingredients - canned peaches or frozen peaches just won't do it. Hopefully you are able to grab some fresh peaches while they are still available!  Peach Salsa The hardest part is waiting for this to chill for an hour - the kids started attacking it right away! We all loved these blue corn and flaxseed tortilla chips - the light flavor was perfect with the fresh salsa, and solid enough to really scoop up a bunch to enjoy!  Peach Salsa Perfect as an appetizer, but I also like putting this on top of grilled salmon or chicken. So good! I think we'll be making more of this tomorrow! Hope you enjoy as much as we do...
