Mirror, mirror on the wall...what's the fairest crisp of all? Crisps made with summer fruits are simply some of the best treats of summer - and this Peach & Pecan Crisp is our absolute FAVORITE of them all! Fresh ripe peaches, at their peak of sweet flavor, topped with the absolute best streusel topping ever - fresh butter, brown sugar, oatmeal and tender pecans. It's better than your favorite oatmeal cookie! And this summer standard is so incredibly simple and fast to make! The hardest part of baking with fruits is always getting the fruit ready, but with my little trick these peaches will be ready in less than a minute! Simply cut a 1-1/2-inch "x" into the bottom skin of each peach, cover with boiling water for 30 seconds, plunge into a bowl of ice water, and the skins will simply slip off! Cut into quarters, pull out the stone, and then cut into chunks. I KNOW! Chunks, because they will cook up more evenly than "slices" of peaches. If you're in a real hurry, you can always substitute frozen peach slices. They're good in a pinch, or if you have a hankering for fresh Peach Pecan Crisp in the dead of winter. For the best flavor, start with RIPE peaches. And they don't have to be perfect! I like to pick up half-pecks of peach "seconds" from our local farmers' market. They may be less pretty, but they're less expensive, perfectly ripe, and usually more perfect for crisps, pies or jams. Perfect with a scoop of vanilla bean or butter pecan ice cream, but truth be told, this stuff is AMAZING all by itself, while it's still slightly warm from the oven.
