This is our favorite carrot cake – very simple, very moist! Carrot cake is very much a personal preference – some like it with pineapple, raisins and nuts. For us, simple is better! And this old-fashioned cake is simply the best! This is a great cake for Easter- it always tastes more flavorable and moist a day after baking. And anything that I can make ahead of time is a win-win for this mama! Slathered with the creamiest, dreamiest Cream Cheese Frosting - this one is a keepsake! I like decorating with edible Easter grass and chocolate bunnies or chicks - but you can add shredded coconut, jelly beans, or whatever you fancy. Chill covered overnight for to enhance the flavor and pull out as a centerpiece for your Easter dinner or brunch. Perfectly wonderful tradition for us, and one that I hope you'll enjoy too!
