A gloriously thick and rich brownie filled with chocolate flavor are the perfect base. Some folks use mini-marshmallows for the marshmallow layer, but they just don't keep a nice texture if you try to melt them or drizzle with hot fudge ganache. It's also darn near impossible to "swirl" through a mass of mini-marshmallows. Fluffy marshmallow crème is the perfect solution! And yes, a small 7-ounce jar will generously top an entire 9x13 pan of brownies. And as fast as I could melt chocolate and get these baked, cooled, frosted and swirled, the race was on! Would I be able to snap some quick photos before the gang ate the entire pan of treats? Would they melt into puddles in the 90 degree sun? In the end, it sure didn't matter! They disappeared fast! And in a season where I tend to do more baking with fresh fruits, a pan of ooey, gooey, marshmallow and fudge covered brownies really hit the spot.
