So this afternoon at 3:30 p.m. my son told me that he needed to bring cookies to school the next day for their "pi" party.  Now, one would think that they would actually want PIE to celebrate Pi Day....but no.  And not just any cookie - he wanted homemade mint and chocolate cookies. 

After all, for his group of honors math friends, this was a very special Pi Day. For the first time in a century, the date (3/14/15, 9:26:53 a.m. ET the date and time matched up with pi's first 10 digits!   

Which reminded me of his first day of third grade - when his teacher called me in a panic at the end of the day.  Being the sixth of our kids to go thru the school, he wasn't our first child to have her for a teacher, but he certainly was going to "present some challenges" she told me.  I asked her what in the world he had done on the first day of school that was causing her such concern.  She explained that she had each child write a paragraph about what they hoped to learn in the third grade - a fairly harmless question, but one that she was excited to read about on the first day, and then reflect back on the last day of school.

Adam wrote that he wanted to understanding the meaning of the square root of pi.

She queried him a bit further - did he want to know what pi was?  "Nope" he told her, "I know what pi is.  And I know the square root of pi.  But I want to understand what the square root of pi MEANS."  She was at a loss for words - and I knew that he was out of my math league as well.   ​

And he might have mentioned it earlier in the weekend before I did my grocery shopping.  And he was ready and willing to bake them up himself - but he was running a fever and had fever eyes.  Now, I may not be able to help him with his math homework any more, but I can certainly help with some delicious home-baked cookies.  Mama V to the rescue!

The batter for these cookies takes only a few minutes to mix together and put in the frige to chill for a couple of hours.

I've made these with Ande's Mints in the past, but remembered that I had a bag of Dove Mint & Dark Chocolate candies just waiting for the right opportunity.  Andes Mints are wonderful,, but don't you think that the Dove's MInt & Dark Chocolate Candies have the most beautiful swirl and shiny sheen?  The mint Is cool, smooth and just melts in your mouth.

These soft and chewy, swirly minty brownie cookies are perfection - and perfect for Pi Day, St. Patrick's Day, or any other special occasion!
