This recipe is one that will ALWAYS remind me of my Dad. It's hard to believe that he's been gone for three months now - my heart is still raw with the loss of my wonderful Dad!
Meatballs, mashed potatoes and mushroom gravy were one of his favorite meals, and he would always help roll the meatballs if it meant that he could enjoy these more often! Classic comfort food, plain and simple.
Tender and so tasty, perfect with mashed potatoes or noodles. I love that these can be made ahead of time and cooking in the slow cooker, ready to enjoy when we get home from church on a Sunday morning!
After my Mom died, Dad would frequently make up a batch of these and eat them every.single.day until they were all gone. Whenever we would visit him in Minneapolis, or he would come and spend time with us, he would ALWAYS ask for these. He loved him some meatballs with mushroom gravy!
