Oh, the fun we have with St. Patrick's Day! It's typically a very green day for us...a tradition that dates back to when I was a kid. My Mom would serve us green milk, and green mashed potatoes...and always some kind of green vegetable. These, of course, are much better than green vegetables! An incredibly dark and moist chocolate cupcake - perfect in every way - covered with a delicious double milk chocolate buttercream frosting. You can always stop there....but why not go for the gold and take it to the marshmallow limit? Last year I made a delicious dark chocolate cake, covered it with a thick layer of rich, melt-in-your-mouth chocolate ganache, and because it was the day before our St. Patrick's Day celebration, sprinkled a couple of handfuls of Lucky Charms marshmallows on the top. It was a tremendous hit with everyone - I knew the kids would like it, but I was amazed at how many of the "big" folks were making a move for any extra Lucky Charms marshmallows they could find laying around. Who knew it would be so easy? This recipe makes a dozen of these beauties, and they really are quick to whip up from scratch, and so much better than anything you can make from a mix! Well worth the few extra minutes it takes - so incredibly rich, dense and moist - even the crumbs are good! The double milk chocolate buttercream frosting is perfect in every way - you can use it for a small cake or dozen cupcakes - double if you are baking more! I usually use Ghiradelli Milk Chocolate Bars for the base. Now comes the fun part - harvesting all of those crunchy Lucky Charms marshmallows! You'll need one family size box if you want to cover these generously - you'll need even more if you have Lucky Charms Marshmallow thieves in your house - like I do! Don't sprinkle these on top of your cupcakes until an hour before you plan to serve - the marshmallows will loose their "crunch" and start to get soggy after a couple of hours on top of the rich Milk Chocolate Buttercream Frosting. Pop them on top right before you put them out to enjoy, and everyone will be happy! Yellow stars, blue moons, pink hearts....gotta love those Lucky Charms!
