From the time that I was a little girl, I have loved everything about horses and horse racing. Beginning with the Kentucky Derby each year, the fun is listening to the background stories and picking out our favorite horses, jockeys and owners, and then HOPEFULLY watching our favorite horse ride to triple crown glory! My Kelsey still loves to watch all of the races with me, and we try to make an afternoon of it with pretty drinks to sip on and our favorite Derby food. One of our favorite drinks to sip on are these beautiful Lavender Mint Juleps. With just a touch of vanilla and hint of enchanting lavender fragrance from a simple lavender syrup, these are perfect for Kentucky Derby, Belmont or Preakness parties...the perfect springtime drink, and almost too pretty to drink! I've got a wonderful little thicket of lavender growing by my garden, but you can also use culinary lavender buds if you don't have fresh lavender available, or if Spring is running late and they just haven't bloomed yet. Simple Lavender Syrup has gotten so popular that you can also buy it pre-made. I've also heard stories of a lavender liqueur, but I've never been able to find it. Wouldn't that be a grand addition to these? For festive drinks, I like to freeze a small sprig of fresh lavender or mint leaves in the ice cubes. And I usually serve these with a pretty little straw - some of my girls just don't care for the texture of muddled mint in their drinks. Garnished with sprigs of fresh lavender and mint, these really are a drink for the girls. All you need now is a pretty derby hat, some sunshine and shade, and springtime fun is ready!
