Irish Shepherd's Pie has always been more a staple of traditional Irish cooking than corned beef and cabbage. That, and my family doesn't really like corned beef and cabbage makes this a wonderful menu selection for a St. Patrick's Day feast! Although traditional Irish Shepherd's Pie is made with lamb, my gang prefers beef, so that's the way we roll with this recipe. This recipe is one that I keep coming back to over and over...so basic, and so good! Layers of goodness! Start with a hearty meat and vegetable layer, sauced up with the most savory and flavorful mix ever. We usually have a large crowd over to celebrate St. Patrick's Day, so I make a double batch of this right off the start. I wanted to coax some extra vegies into the kids this year, so I also threw in a bag of frozen mixed vegies to the mix, and it really was a wonderful and colorful addition! If you are cooking for a group that doesn't care for peas, this is a nice alternative - the green beans take the place of some of the peas, which should keep everyone happy. Top the savory meat and vegetable base layer with a delicious layer of garlic mashed red potatoes, loaded with fresh shredded cheddar cheese, and top with a delicious crust of buttery bread crumbs and fresh grated parmesan cheese. The aroma coming out of the oven was wonderful, and everyone was ready to dig in and enjoy! Perfect with my Herbed Cheese & Beer Bread, fresh creamy coleslaw and some icy cold Irish beer. Hope that your St. Patrick's Day feast tastes as great as ours was! This recipe is one to keep, and enjoy over and over again!
