Okay, I'll be honest about this cake. It is SERIOUSLY delicious - even without the Lucky Charms marshmallows! I don't think I've met a kid yet that doesn't love the marshmallows in Lucky Charms Cereal! And if you're lucky enough to find the St. Patrick's Day special edition of the cereal, you are even luckier! This moist and fudgy cake is perfectly decadent when piled high with Dark Chocolate Fudge Ganache, but the Lucky Charms marshmallows make this magically delicious! Probably the hardest thing about making and decorating this cake is sorting the marshmallows out from the cereal - there are too many little hands around my house that are just waiting to devour them! One tip - sprinkle and lightly press the marshmallows on top of the ganache right before you serve. They will stay perfectly "crunchy" for a couple of hours, but after that, they will absorb moisture from the ganache and soften slightly. Hope that you enjoy this as much as my little ones do!
