Sweet, tender carrots - fresh from the garden! It's been the strangest summer growing season ever around here. We had rain the entire month of June, cooler temperatures in July, and warm all the way thru September, which means that everything in the garden had a slower and longer growing season. Start with a big bunch of fresh carrots - give them a good wash and save those carrot tops for garnish! I roast these with the most delicious honey balsamic glaze you ever tasted! I do recommend using the best balsamic vinegar that you can afford. I adore the tang of balsamic vinegar and love how it plays with the sweetness of the honey in this recipe. Such a simple ingredient list...but the end result is complex, deep and satisfying on so many levels. Hope you enjoy - these are like eating candy!
