These are a family favorite at appetizer parties or just for munching! I never have any trouble getting the kids to help make these, and they fight over who gets to eat the leftover "ends" of each rollup. Make sure to pat your pickles with paper towels when you start assembling these. You'll slather each slice of maple ham with onion & chive cream cheese. Start rolling your pickle at one end of a ham slice, and then roll three consecutive slices of ham & cream cheese around each pickle, rolling slow and firmly to keep each pickle roll as compressed and tight as possible. Slice each pickle roll into one-inch slices. You can secure them with a decorative toothpick, but they will stick together without it (and it's a little safer having no toothpicks laying around if you have little ones). These can be made ahead of time for parties, but make sure to lay them flat and cover with a moist paper towel in the fridge until you are ready to serve. And if you are lucky enough to have any left the next morning, they make excellent snacking for breakfast!
