One of our favorite Christmas Eve appetizers are Ham & Dill Rollups. I was thinking about how much everyone loves these, when it suddenly occurred to me... What if I de-constructed the recipe? Oh.My.Goodness! I don't know why I didn't think about doing this years ago, because this is such a timesaver in making, but still delivers the fabulous ham and crunchy dill taste that everyone loves! And once I had chopped and blended this together, chilled it in the fridge overnight, and pulled it out the next day, you should have heard the gasps! My little ones (and my big ones) went diving for pretzels, butter crackers, pita chips, and even spoons - just to scoop up and enjoy! This is also pretty darn perfect smeared on fresh plain bagels or onion bagels! I used smaller dill pickles for this recipe, so that the pickle pieces would be firmer and without some of the "mushiness" you get from really large pickles, and this was perfect! Start with some creamy chive & onion cream cheese, chopped deli ham (or leftover baked honey ham if you have that), add the chopped dill pickles, some fresh spices, and the slightest drizzle of dill pickle juice, and BAM! You just gotta love success! Hope that you'll love this recipe as well!
