Everyone knows when we are getting close to St. Patrick's Day, because I pull out my heavy cast iron stew pan and pick-up some Guinness Irish Stout. The Irish holidays are about to begin! Unlike most stew recipes, the meat is not seared prior to cooking. This stew cooks uncovered in the oven low and slow! The uncovered meat browns and caramelizes, and the sauce thickens up perfectly. While it is slow cooking the sauce may seem a little on the thin side, but the longer it cooks it becomes perfectly rich and thick. Everyone raves about the layers of flavor in this traditional stew! This Guinness beef stew is incredibly easy to prepare, and nearly all of the cooking time is hands-off. The meat is exceptionally tender, there are tons of potatoes and carrots, and it’s all drowning in a perfectly smooth and rich Guinness-spiked gravy. Absolutely delicious and a must for St. Patrick's Day celebrations!
