Salmon Fillet Princesse - such a fancy name! "Princesse" is one of those recipe names that gives a pretty good indication of what might be in it, which in this case is asparagus! Along the same vein are dishes named "Florentine", which contains spinach; "Veronique" which usually includes grapes, and "Provencal", which usually means that fresh tomatoes, garlic and basil are included. No fancy stemware, no fancy china, no fancy restaurant...but this was the most perfect dinner! The photos don't begin to do this justice, but take my word for it, this fresh Salmon with Asparagus Cream Sauce is to die for! It was such a nice night that we were able to sit out on the porch swing and enjoy our dinner with a nice bottle of champagne, a roaring fireplace, and total peace and quiet... I want to go back again soon!
