I'll never forget the first time that we had this! My Mom & Dad's insurance agent had invited our family over to their home for a delicious homemade dinner, and this was served. I thought my Mom was gonna go to the moon! Who doesn't love the classic Green Bean Casserole combination? But this creamy, homemade version is soooooo much better than the canned cream of mushroom soup! The creamy mushroom sauce is fresh, rich, and so flavorful! It may take a few more minutes to make the sauce, but it is so much better than the "gloopiness" that is cream of mushroom soup! And if you want to take it one level higher, you can always make homemade fresh fried onions or scallions to put on top. We actually prefer the crunch and flavor in the ready-made version, and I usually stir half of a large can (about 1-1/2 cups) into the green bean mixture, and then sprinkle the remaining 1-1/2 cups on top. You can never have too many French-fried onions - I'm just sayin! Hope you enjoy this wonderful recipe - it is one of our family favorites!
