When I was a little girl, one of my favorite memories is of my Mom reading "Blueberries for Sal" to me, over and over again. I could never get enough of this wonderful classic childhood story of a little girl picking blueberries with her Mum and encountering a wild bear on the side of the mountain, and I could NEVER get enough fresh blueberries! What made it even more special were the times that she would take me berry picking in the springtime. And I was ALWAYS on the lookout for bears! One of my favorite things to make with fresh blueberries is this crazy good Fresh Blueberry Sauce. Homemade is always the best, and this perfectly flavored and chunky sauce is perfect on just about everything - pancakes, waffles, cheesecake, ice cream, oatmeal, yogurt, or simply by the spoonful! So simply and easy to make, you need to make this right now with your little ones! Start with the biggest, bluest and freshest blueberries you can find. You're going to simmer them for just a few minutes in apple cider and sugar, with some cornstarch to thicken it up, a spoonful of fresh lemon juice, and just a touch of pure vanilla extract, and you'll be drizzling Fresh Blueberry Sauce before you know it! And for something a little extra special, use fresh pineapple juice (instead of water) with the cornstarch. You'll be amazed at what this does to the flavor, and no one will know it is even there except for you!
