I'm a sucker for anything French or Parisian...and it is really hard walking past Au Bon Pain French café every day! The little café tables, the French-pressed coffee, and the smells from the bakery just take you to another world! We love their fresh-made soups, but it's the English Toffee Cookies that are my downfall! Tender on the inside, crispy on the outside, and loaded with English Toffee bits - and at almost $2.00 each, a pricey little treat! It's a good thing that I was able to create my own version of this luscious little cookie! It really is my most favorite cookie in all the world! Turn on a little French baking music, get out a few ingredients, and you'll be enjoying these at home in no time at all! A cup of fresh hot coffee and sunshine streaming thru the window, and you'll be in cookie heaven! So easy to make, but the secret is to make the cookie dough the day BEFORE you want to bake them! I usually crush extra English Toffee bars to sprinkle on top when I take them out of the oven. The English Toffee INSIDE the cookies melts into a wonderful layer in the cookie, but the little bit extra sprinkled on top just takes these to the top! These cookies also freeze well, so if you have a special event coming up, you can make these ahead of time and just pull them out of the freezer the day you want to serve. But remember to hide them well - they seem to mysteriously disappear at our house!
