If you love Panera's Strawberry Poppyseed Salad, you are going to LOVE this pasta salad as well! I have to confess, the first time I heard about mixing chopped lettuce with pasta in a salad I was a little skeptical, but man-oh-man, this fresh salad is just BURSTING with texture and flavor!
All the best flavors, loaded up with juicy fresh summer strawberries and blueberries, salty pistachios or almonds, and chunks of creamy avocado, with some flavorful feta cheese crumbled on top just because - and drizzled with a sweet and tangy poppyseed dressing. The flavor just explodes in your mouth!
I made a batch of this the other day and it was a huge hit - and then I got pestered to make it AGAIN a few days later. I can't lie, this is so easy to make and is loaded with all kinds of fresh goodness from the garden - lettuce, strawberries, blueberries - if only I could figure out a way to grow avocados in our climate!
We've used both salty pistachios and creamy sliced almonds in this - and it is fabulous either way. But this healthy and creamy version of poppyseed dressing just takes this salad over the top!
