I'm pretty lucky that all of my little ones are pretty crazy about vegetables - at least most of them! I have tried so many different ways thru the years to get my little ones to like cooked cabbage - roasted, steamed, rolled & stuffed...but they aren't having it! For St. Patrick's Day, I've kinda given up, and just go with something that I know that they love - Cranberry Apple Coleslaw! This twist on traditional coleslaw is perfectly creamy and sweet, with the wonderful flavor of tart and sweet apples and dried cranberries. This sweet and crunch coleslaw is perfect with all of our favorite Irish dishes, and as a wonderful side salad, and even more delicious topped on pulled barbeque meat in a delicious sandwich.
