 Cornbread Waffles with Maple Bacon & Fresh Blueberries DANG! If this doesn't get you out of bed in the morning, I'm not sure what will! Skipper is currently enjoying the Atkins Diet. The rest of us, not at all! It makes for some interesting challenges for this food-blogging Mama, but I've learned to incorporate his protein and meat packed diet into everything that I can! And with the fresh smell of bacon and pints of the most beautiful fresh blueberries sitting before me, inspiration hit!  Maple Bacon & Blueberry Cornbread Waffles Skipper loves the bacon, and loves the fact that he's lost five pounds in the last week. The rest of us love a warm cornbread waffle, infused with just a touch of real maple syrup, studded with bacon bits and blueberries, and drizzled with maple syrup glazed bacon and a boatload of even more fresh blueberries. SO GOOD! My kitchen smelled so darn good, and everyone was pretty darn happy with the results. I'm not sure why it is, but the blueberries have been gigantic this year - and so juicy and flavorful! We're eating them by the handful, when I'm not building stacks of these delicious waffles! Hope that you can enjoy a lazy morning with these and someone you love!
