This is the true story of the incredible disappearing cookies. I went a little bit crazy this weekend and whipped up three batches of our favorite English Toffee Cookies - and created a trifecta of perfect cookie treats! Every once and a while it's fun to shake things up and see if we can improve on an old favorite!
These are absolutely the most perfect chewy English Toffee Cookies in the world! Warm from the oven, they are a little bit of cookie heaven. But dip them in rich dark chocolate or milk chocolate? End of story!
I had more than a few people asking me in the days that followed if there was a hidden stash of these. Even I was a little shocked at how fast they disappeared!
I used to think that chocolate chip cookies were the most favorite cookie out there, but I'm telling you, these are seriously good! Soft and chewy on the inside, lightly crunchy on the outside, and melted English toffee in every bite of delicious cookie. The flavor is out of this world!
Make sure to use good quality chocolate for dipping or drizzling...I use Ghirardelli bars or melts to get that wonderful shine and creamy, rich chocolate flavor. Plain old chocolate chips just don't work out the same!
Now, these English Toffee Cookies are as good as it gets! You can leave them absolutely plain and unadorned, or for something a little bit special, you can dip them in chocolate or drizzle melted chocolate over the top.
