OH-LA-LA-LA! We had a special birthday to celebrate this weekend and really needed something to knock the birthday girl's socks off! She wanted brownies, she wanted black raspberry truffle ice cream - and she asked me to surprise her with something special. She was speechless with the wonder of it all!
This is a wonderful change of pace from a traditional ice cream cake - and so easy to make! And the beauty is that you can customize this to YOUR favorites. Vanilla bean? Chocolate? Mint Chocolate? Superman ice cream? You get the idea!
I wanted a sturdier base that just cookie crumbs or graham crackers, so I started with a base of our favorite brownie recipe - Chewy Fudge Brownies. We had picked up the birthday girl's favorite ice cream from Loder's Shake Shoppe in North Royalton, and I had that waiting in the freezer. Black Raspberry Truffle ice cream was the star of the show, layered with a cookie hot fudge layer and topped with chocolate ice cream. Drizzled with the tiniest bit of hot fudge, topped with chocolate whipped cream and the freshest raspberries - ice cream cake perfection!
The secret to this is really just time, because you really can't short-change the freezer time required between each step.
