I just love the Mexican Fiesta theme for our surprise party...and it is so much making easy and delicious recipes that I know that EVERYONE will love! Chipotle Chicken has always been a favorite - perfectly seared and moist chicken, full of flavor and spice!
Perfect for tacos, burritos, enchiladas and even on salads! (And truth be told, we even had some stuffed in breakfast burritos the day after the big event.)
Using a hot rotisserie chicken makes this so fast to put together! And if you like a smoother sauce and not so much the bits of onion, you can give everything but the chicken a quick twirl in your blender or food processor for a smoother sauce on the chicken.
The adobo sauce is really the secret to the flavor - so feel free to add a little bit more if you want this a little bit saucier, or add another teaspoon of ancho chile powder or a dash of red pepper flakes if you like it a little bit spicier.
This is so easy to make ahead of time and keep warm in a crock pot (on low) or buffet server. The perfect copycat recipe for Chipotle chicken...and one of our favorites!
