One of our holiday family favorites is traditional Chicken Cordon Bleu - a chicken fillet breaded with seasoned crumbs, and stuffed with brown sugar ham and thick slices of aged Swiss cheese, drizzled with a delicious cream sauce and served over Wild Rice Pilaf. It takes a bit of time to make, which is probably why we only have it for special occasions. I wanted to shake things up with a simply skillet version - and you will die for this Chicken Cordon Bleu with Creamy Dijon Sauce! Easy enough that you will have this on the table in less than 30 minutes, but delectable enough that you could serve for a special dinner! I start with boneless, skinless chicken breasts and pound them out to about 3/4-inches each. Dredged in seasoned flour, they fry up for about 5 minutes each side in your favorite skillet. If you haven't invested in a digital instant read thermometer for your kitchen yet, now is the time to do so! Once you see how easy these are to use, you'll wonder what you ever did without one! You'll want to make sure that this chicken is cooked to 165 degrees. While that's going on, it only takes a few minutes to whip up the creamiest, dreamiest sauce ever! With Dijon mustard and just a little kick from some Zesty Honey Mustard, this sauce is just perfect! I use deli brown sugar baked ham and thick slices of aged Swiss cheese. Drizzle with the Creamy Dijon Sauce, and top with some seasoned garlic butter croutons - and before you know it, dinner is ready! Go ahead - you know you want to taste this! The chicken is so moist and flavorful that there won't be a bite left! Hope that you enjoy this favorite - it's a keeper!
