Fresh cherries are in! I was so excited when I saw them at the grocery store that I picked up a pre-packaged bag - priced at $6.79 - but for the first fresh cherries of the season, well worth it! Imagine my surprise when I discovered that it was $6.79 per POUND, not package! So that meant 1/3 of the bag for a fresh Cherry & Almond Crisp, 1/3 of the bag for photography, and the remainder just for enjoying! Also had the fun of trying to explain to a three-year-old what a cherry pit is and why we don't eat them! He was VERY intrigued by it all, and "could we please plant some of the cherry pits in the garden?" Cherry & Almond Brown Sugar Crisp is one of the first crisps of the year, and so wonderful! Just like a cherry pie, but without all the fuss. I like using a combination of frozen sweet cherries and fresh sweet cherries - makes for beautiful color and layers of cherry flavor, but you can use whatever combination you like depending on the season. This is a GREAT dessert to make at home or when camping - perfect in cast iron or a dutch oven. The crumbly and buttery crisp almond topping is like a wonderful oatmeal cookie on top - a perfect match to those juicy plump cherries. For camping, dutch ovens work perfectly for baking this delicious crisp. We have cooked up more batches of this in the past than I can count! Cast iron skillets also work beautifully and create a slightly "thicker" cherry almond filling - no need for it to cool down, just let it sit for an hour to cool down, and serve warm with vanilla ice cream. YUM! Once the almond slices are golden brown and the cherry juices are bubbling at the edges, you are getting close to enjoying your first taste of this delicious baked crisp.
I can't begin to tell you how wonderful this is - especially when you can enjoy with your family at the end of a relaxing day!
