For all those times when you are making Italian spaghetti, lasagna, manicotti or any other dish that just screams for some fresh garlic bread to go with it, this is the recipe you've been looking for! One of my little ones is SO crazy about Cheesy Garlic Bread that he will many times want this instead of pizza. Unbelievable, but true! And when you know how easy it is to make this at home, you'll discover that this is perfect with just about any Italian dinner you can think of, or just for those times when someone wants a little snack. Although traditionally this is made on crusty French or Italian bread, we love fresh Costco Torta Sandwich Rolls for a different taste. These are flavorful, chewy, ciabatta style rolls that lends itself perfectly to Cheesy Garlic Bread! Split them in two, and you also only need to butter one side - which really cuts down on the calories, but doubles down on the chewy texture and taste! Of course, you can also use your favorite French or Italian bread to make this - just make sure it has a "crusty" crust! How many times have you made one of the frozen varieties of cheesy garlic bread or garlic bread, where the bread is just SATURATED with oil, and has no taste or texture left? I use a mixture of unsalted butter and olive oil as the base spread, with a hint of garlic, which adds all of the flavor you love, but none of overwhelming, over-saturated buttery mess. These bake up perfectly buttery, toasted and golden! Sprinkle liberally with your favorite grated or shredded cheese - parmesan, mozzarella, provolone - they're ALL good! Sprinkle with some fresh snipped parsley or Italian herbs, and you'll be enjoying the most perfect Cheesy Garlic Bread you've ever had! Hope that you love these as much as we do!
