It is the Fourth of July weekend, and there is nothing more American than corn and bacon, right? So now that I have used up all of my stash, I need to back to the store and hope that they are still carrying this product! But we couldn't wait until then, so I used some fresh corn that we had just picked up from the farmer's market, added some barbeque seasoning, and made it again. PERFECTION! I had used Boursin Garlic & Herb Cheese to make this, and believe it or not, when combined with the other spices, the onions and the bacon, this really takes on a nacho-like flavor. So creamy and good, I can't begin to tell you! If you would like it a little bit creamier, you can stir in a couple tablespoons of half & half when you are mixing this up. If you were really crazy, you could also sprinkle some shredded cheese over the top and melt it all up, but it really isn't necessary, unless you happen to be married to some guy from Wisconsin that LOVES his cheese! Needless to say, this is a new favorite, and I'll be adding it to our summer rotation for vegetables...and/or.....appetizers! Hope that your taste buds enjoy this too!
