Funny how summer rolls around, and all of a sudden everyone is craving salads and fresh fruit!
This wonderful salad is perfect for a summer lunch or dinner. I drizzle the chicken with KC Masterpiece Hawaiian Spicy Mango Marinade for a light and spicy kick, but you could easily substitute rotisserie chicken or your favorite cooked chicken. On a whim, I used Honeybaked Smoked Turkey Breast a few summers ago, and that was a huge hit as well. The magic of this recipe is that you can pretty much pick and choose your favorite selection of grapes, dried cherries instead of the dried cranberries, slivered almonds instead of the cashews. My Mom used to make this for "ladies luncheons" and bridal showers, but my entire family loves it every time that it makes an appearance. We're going to enjoy a late dinner with this favorite tonight and watch the sun go down. Bon appetit!
