Is there ever something new that you try that becomes a family favorite, like immediately? The first time we made this, I expected that my pineapple lovers would go crazy for it, but I think we've been making it non-stop this summer! Never have we gone thru so many fresh pineapples before! And my little ones keep trying to plant the pineapple "tops", hoping that they can grow their own pineapples...summer dreams! And to officially kick off the first day of summer, what could be better than Caramelized Grilled Pineapple with Brown Sugar Chili Glaze? To get started, grab a fresh ripe pineapple and your machete... Well, even if you don't have a machete, this stuff is crazy easy to make! Peel and core your fresh pineapple into 8 spears. Next, you'll be making the most glorious glaze with melted butter, brown sugar, orange juice, sweet Asian chili sauce, a little kick from chili powder, and fresh squeezed lime juice just to make it perfect. Coat your pineapple spears, throw them on a medium grill, and baste with the reserved glaze, turning when your pineapple has beautiful, golden grill marks (usually this only takes about 8 to 10 minutes). That's it! I told you it was easy! But once you TRY this, you'll know that it is absolutely magical...perfect with a teriyaki or Asian grilled dinner, perfect in a salad, and perfectly wonderful all by itself! My kiddos can't get enough of this stuff! Give it a try and let me know how you like it! I'm sure it will be your new summer favorite too!

Oh, yum!! This looks amazing. Grilling makes the fruit so much better. I love grilled peaches too. I can’t wait to make your brown sugar sauce, and we do like it spicy. Have a great weekend.
