This silky cheesecake is perfect for a special fall celebration - and with six birthdays to celebrate this month, it's nice to have something other than birthday cake for a change of pace. Loaded with tiny bits of toasted butter pecans, browned butter and silky caramel flavor! And the cinnamon sweet whipped cream and salted caramel drizzle? Perfection!
This is one of those times when a picture really is worth a million words....and a million bites!
I start by toasting the chopped pecans in sweet cream butter and brown sugar. Toasting really brings out the "nutty" flavor, and the caramelize pecan bits are just perfect. The cheesecake crust is something out of the ordinary as well! I use pecan shortbread cookie crumbs for the perfect base, rather than your typical graham cracker crumbs. And the filling? Browning the butter starts off the creamy cheesecake flavor - rich and silky and infused with the little flecks of browned butter, brown sugar and caramel. So easy to make, so easy to bake! The hard part is waiting overnight for this to reach dreamy cheesecake perfection.
