Brown Sugar Buttermilk Pancakes with Fresh Spring Berries

Happy May Day!  And to kick our month off, we're going to start with something simple, fresh and perfect for a spring morning!  I had fresh raspberries, strawberries and big juicy blackberries just waiting to be added to something special. 

​And what could be more wonderful than a stack of warm Brown Sugar Buttermilk Pancakes, loaded up with all of our favorite spring berries?  Perfect for breakfast, lunch or dinner!

Brown Sugar Pancakes with Spring Berries

This tender buttermilk pancake is just slightly tweaked from our favorite Grandma Petska Buttermilk Pancakes.  The addition of brown sugar, vanilla and melted butter give this a slightly richer taste.

​The flavor is just perfect, and are pretty darn tasty with just a smear of butter and fresh fruit on top - you can skip the warm maple syrup if you want to and still feel like you are getting a wonderful treat!

The spring berries have been especially sweet and early this year - the fresh raspberries, strawberries and blackberries are all so sweet and perfect that it's hard to pick just the right berry.

We're getting ready to plant some more berry plants this year, to add to our collection of Minnesota berries.  It will probably be slim pickings on the new plants this year, but we're already looking forward to a delicious harvest next year!

​I remember my Mom having boisenberry and elderberries in our backyard when we were growing up, but I haven't seen those in years.  The neighborhood moms had several years of making homemade wine with the berries - what a hoot they had doing that!  What's your favorite berry in the spring?​
