I remember making breakfast in bed for my Mom when I was just a little girl. There was the year I made fried eggs and toast (all by myself) and delivered them to her bedside - LOADED with salt and pepper. She hugged and kissed me, and thanked me profusely, and more importantly, ate every bite of what had to be an absolutely miserable breakfast. Now that I'm a mom, I appreciate even more all of the sacrifices she made for me thru the years, always with a smile! She would have LOVED these fresh and tasty Breakfast Yogurt & Fresh Fruit Pies - probably as much as I would have loved making them for her! I usually have Keebler mini graham cracker crusts on hand, but in a pinch you could also crush fresh graham crackers, add a tablespoon of granulated sugar, and mix with enough melted butter to make a crumbly crust, and press into the bottom of a ceramic ramekin or miniature pie form to make these pretty little crusts. And if you have a breakfast guest that doesn't care for graham cracker crusts at all, you can build beautiful Breakfast Yogurt & Fresh Fruit Parfaits, layered with homemade Granola - I've posted some of our family favorite Granola recipes on this site that work perfectly! Dried fruits, nuts and coconut are other great toppings. These are such a fun and easy idea for lazy weekend breakfasts! Everyone can get as creative as they want, and it always ends up being so fun for everyone - especially the little ones! And when they make their own breakfast, it is amazing how much the littles EAT! I usually use Greek yogurt, as it packs a lot more protein and less sugar than some of the more "processed" fruity yogurts. You can go crazy buying fresh fruit for these - our favorites are fresh raspberries, strawberries, blueberries, blackberries, kiwi, orange segments, bananas, cherries and pineapple. Add some fresh baked muffins, and you've got breakfast for a queen!
