Sky-high non-bake banana cream cheesecake on top of a buttery golden cookie crust...drizzled with our wonderful homemade Blackberry Jam, and then garnished with fresh banana slices and fresh blackberries. In less than 30 minutes I had this fully prepared and loaded into the freezer, ready for a good chill overnight. I can hardly wait to see everyone's faces when I pull this out tomorrow! But the Blackberry Jam really takes it to the next level. Not too sweet, but the perfect combination of light and airy, but silky and rich enough so that you'll be happy with just a small slice. If you're looking for something special to make for a summer picnic or party, you can't go wrong with this one! If you've ever had non-bake cheesecake, you know that its hard to get the perfect balance. You don't want to specifically taste the cream cheese, and while I typically stay FAR AWAY from instant pudding because the flavor sometimes seems so off, the combination in this silky cheesecake is perfectly balanced. Everyone was trying to guess exactly what the ingredients were. I guess this will need to be our little secret?  Blackberry & Banana Cream Cheesecake Everyone LOVED this! This cheesecake look so good! I’m loving blackberries like mad right now too, and can’t wait to use some I got at the farmers market in something baked. It’s just hard to save them as I love them in everything, too! I never would have thought to combine them with bananas, but this looks wonderful!
