I couldn't believe the size of the fresh blackberries at the store this morning! So big and juicy! Each of these berries was about an inch and a half long - I kid you not! And so sweet and good, they were PERFECT!
And for a sunny and crisp Autumn day, what could be better for dinner than Pork Tenderloin glazed with Blackberry Hoisin Ginger sauce?
This is one of the classic sauces that I make in big batches and have on hand for a meal or two - the sweet and spicy sauce is just perfect brushed on the pork tenderloin while it is grilled, or roasted in your oven.
Dinner was ready in less than 40 minutes - start to finish. And the wonderful thing about grilling is that clean-up is a snap!
And for those that aren't crazy about pork, this glaze is perfect on chicken breasts as well. When I have a big crowd for dinner, I sometimes make a little bit of both, just to keep everyone happy!
Our first hard frost warnings are coming this next week, so we need to enjoy each and every minute outside that we can!
Some fresh jasmine rice, fresh blackberries and sliced green onions for garnish, and a glass of good wine, and dinner is served!
