What better way to kick off a birthday celebration that with some delicious pancakes, light and fluffy, loaded up with strawberries and sprinkles? When I went grocery shopping this morning there were stacks and stacks of the biggest and most beautiful strawberries I've seen in a long time! Last week there wasn't such a great selection for Easter brunch - much smaller berries, but very sweet - no complaints from anyone. With the hard cold winter we had this year in so many parts of the country and around the globe, you have to wonder if crops will be coming in differently this spring and summer. Already they are announcing that the grape harvest has suffered a major setback. And my treasured rhubarb plants are very slow coming up this spring! In any event, as soon as I got home we whipped up a double batch of these lovely treats. Lots of fresh, sweet strawberries, and lots of sprinkles. The little ones wanted theirs topped with whipped cream as well, and as long as this was the start of a birthday celebration, why not?
