From the time that my littles were little, this has always been one of their favorite cookies - and we call 'em the way we see 'em - BIG SOFT GINGER COOKIES! So big, so soft and so chewy - they are the perfect cookie! I make them for Thanksgiving and Christmas (always), but we make them at other times of the year as well. Each batch makes about 24 cookies, and you can simply give them a quick roll in sugar, or wait until they cool and top them with a simple buttercream frosting - just make sure to add lots of sprinkles! These cookies also freeze real well - so easy enough to make ahead of the holidays and have on hand! Just remember to store these all by themselves, so that the ginger spice flavor doesn't move to your other cookies! Many times I'll make a couple of batches, and decorate them several ways. These are the perfect cookie to have the little ones help out with - from rolling the cookie dough balls, to spreading the frosting, to adding lots of sprinkles - it's all fun memories!
