So easy to make! I started with a jelly-roll pan of fresh baked Banana Bars. While these were baking, I whipped up some fresh homemade and creamy vanilla pudding. While the banana bars were cooling on the counter and the creamy pudding was cooling and chilling in the fridge, I could only imagine how wonderful these were going to be later in the day! Once the pudding cooled, I spread it over the fresh banana bars. Sliced fresh bananas are the next layer, and topped this with fresh sweetened whipped cream, before putting the pan in the fridge to chill completely. You can garnish with some more fresh banana slices (cut on the diagonal) and a mint leaf, or if you really like your banana cream pie, crush some Nilla Wafers and sprinkle over the top. On a warm sunny day, this is the perfect treat - and a wonderful surprise for my gang. They absolutely went BANANAS for this! If you're in a big hurry, you could save some time and prepare instant vanilla or banana pudding, and top with Cool Whip. But if you've got the time, making this from scratch is the way to go - who knew that homemade pudding was so dang easy to make, and it just tastes so creamy and good! Makes for a better pan for the little ones to lick-up leftovers out of as well! This really makes a nice-sized batch - you can easily serve 24 with this recipe. Next up - I'm going to figure out a way to make this with a creamy vanilla pudding and fresh coconut. Don't you think the combination of coconut and banana would work just as well? Some toasted pecans would also be good added to the mix. It's always fun to try new things! Hope that you enjoy these as much as we did!
