It is so nice to wake up in the morning and know that we'll be heading out on the water for a day of sunshine and fun. First up - check the weather reports and water conditions. We can have storms and swells on Lake Erie, but a beautiful sunny day and water like glass on Chippewa Lake.
The kids are all pretty well trained to pack their own "go bags", so other than packing a picnic lunch or something to grill for dinner, we are usually ready and out the door in short order.
Oh how we love lazy summer mornings and fresh Banana Bread! When we're heading out on the boat for the day, its fun to bring something different along, and these moist flavorful soft cookies are always a big hit. I like to have food along that is ready to serve, and I haven't met anyone yet that doesn't love these!
I like it that I can make these a day ahead and have them packed and ready to go the next morning. The flavor grows sweeter and more banana-ie when these have a chance to rest after baking.
If you're really feeling crazy, you can also make Banana Bread Cookie Moon Pies.
Slather the bottom of one round cakey cookie with your favorite buttercream or cream cheese frosting, top with another Banana Bread Cookie, and roll the edge in mini-chocolate chips.
