Today was the battle of the bananas! A favorite snack for most everyone in the family, I buy BUNCHES of bananas every week - and if I'm lucky enough, there may be enough ripe ones left at the end of the week so that I can do some baking with bananas. Nice golden bananas, with lots of brown sugar sweet spots, just waiting to be baked into wonderful banana bread, banana muffins, banana cake, or even an occasional banana fluffernut pie over the campfire. Just as I pulled out these golden treasures and started to pull out baking supplies from the pantry, my youngest announced that he was sure hoping that I would make some banana bars, because it had been FOREVER since he'd had them. I had to agree with him - we tend to enjoy these more frequently in the summer time. They are so darn good when they are chilled! So, the question then became what type of banana bars to bake - simple Banana Bars with Creamy Cream Cheese Frosting, or the more decadent Chocolate Chip Banana Bars with Fluffy Milk Chocolate Frosting. Luckily I had lots of ripe bananas, and a few hours to spare, so the battle was on! It's funny how everyone has a favorite, so the good news is that everyone enjoyed their favorite, or tried both. The vote is still out....which do you think should win the bake-off challenge?
