If you have ever been afraid of Brussels Sprouts - be brave! These aren't even related to the pale, mush and over-boiled bulbs you may have been forced to eat as a child. I do have faint recollections of peeling these apart, leaf by leaf, and thinking I was gonna DIE when my Mom made Brussels Sprouts when I was a kid - but my kiddos gobble these up faster than french fries!
The bacon, garlic and onions roast just as the Brussels sprouts do, and everything will be nice and crispy by the end of cooking time. Roast until the edges turn golden brown and crispy, and then sprinkle with fresh Parmesan cheese. YUM!
