Another new year, another new start! And there's no better way to start than with a great breakfast! Healthy and delicious, perfectly dense and flavorful - these whole wheat muffins are stuffed with sweet apples and lots of cinnamon spice! And with only 185 calories each, they are a tasty and satisfying way to start the day! Shredded apples and applesauce are combined with real maple syrup and vanilla. The flavor is just right - not too sweet, but perfectly balanced! You can mix and match this recipe up to meet your taste as well - if you don't care for whole wheat flour, you can use all-purpose flour. And use either pecans or walnuts - whatever suits your tastebuds! Over the years I've learned that muffins turn out the best if you bake them in liners, and in dull, light-colored muffin pans. Baking them in dark pans and/or without liners, you'll get a darker, crispier muffin bottom and sides. For me, we like them light, flavorful and sky-high! And if you like your muffins a tiny bit sweeter or "prettier", you can sprinkle the top lightly with sparkling sugar. And just how do you get your muffins to pop up sky-high? Don't overmix your batter! Fill the muffin liners 3/4 full with muffin batter. To begin, these are baked at 425 degrees for 5 minutes, and then the oven temp is reduced to 350 degrees. This initial hot burst of air will spring up the top of the muffin quickly, and then the inside of the muffin bakes slowly for the remainder of the time. The result? Perfect muffins, every time!
