Lazy Sunday mornings just call out for something special to nibble on...and this Apple Cinnamon Swirl Bundt Cake with Maple Glaze is perfect alongside a fresh-brewed cup of coffee! Yes, you absolutely could serve this as a dessert, but it makes a perfectly wonderful coffeecake too! And like most bundt cakes, this cake is even more moist and flavorful the day AFTER you bake it! Our son gets home early today from Boy Scout Polar Bear camping - sleeping outside in 5 degree weather (and wind chill well below zero) in shelters they built out of downed tree limbs, sticks and tarps. For me, I'll take a nice wood cabin with a roaring fireplace any day - sounds more relaxing and warm to me! He loves anything apple, so I whipped this up yesterday to surprise him. The most perfect vanilla-infused yellow cake, filled with a delightful swirl of apples and cinnamon - this will be one of your new favorites too! COOKING SCHOOL TIP: When you are making a bundt cake or tube cake, make sure that you grease and flour your pan GENEROUSLY - or spray liberally with Baking Non-Stick Spray around the center and all edges of the pan right before you pour your batter in the pan. This cake is going to cool in the pan for an hour or two after you take it out of the oven to allow the apple cinnamon swirl to cool and set-up. You want even a non-stick pan generously greased and floured to allow it to remove easily and cleanly when you invert your cake. Another little trick is to brush the top and sides of the cake with warm maple syrup immediately after removing the pan. This will seal the outside and keep all of those delicious moist crumbs the way you want them. It soaks right into the cake, so no one will even know you did this, but it is MAGIC in terms of keeping your cake fresh and moist for days. And even though Maple Glaze is probably not the first thing you think of when you are talking about an apple cake, they really are made for each other! The glaze is light and shiny, and has just the perfect amount of sweetness when you drizzle it over the top of your cake. You can also make this with peach, lemon, cherry or raspberry pie filling - whatever your favorite fruity swirl might be! It's almost too pretty to eat, but heck, enjoy with someone you love!
