The strawberry balsamic glaze made for some of the most flavorful and moist salmon ever...and it is perfect in a salad! Out to the garden to pick some fresh greens and give them a quick rinse...and then simply break up the salmon over the top. You can crumble and add some gorgonzola or feta cheese if you'd like - it is a great combination! Garnish with slivered or sliced almonds (no need to toast first), which add just the right amount of "crunch". The fresh picked strawberries are small, sweet and so perfect right now! You can either use whole sweet berries or slice up larger ones. If your strawberry is small, you don't even need to cut off the top of the berry - just make sure to clean them well in cold water and drain, slice them right in half to garnish. Drizzle with fresh Strawberry Poppy Seed Dressing, put your feet up, and have a wonderful and relaxing lunch! I love me a fresh green salad in the summertime - and this is so pretty, pink and delicious!
