 Fresh Peaches & Fresh Tomatoes = Fresh Peach Caprese Salad Fresh peaches make for a nice twist on a classic Caprese Salad - perfect for lunch or dinner! I am always amazed at how quickly this disappears when I make it - even the little ones love to eat this! I use an aged raspberry balsamic vinegar to add just another layer of flavor - but lets face it, with fresh ripe tomatoes, peaches and creamy fresh mozzarella, you can't really go wrong. If you prefer a thicker and heartier balsamic, you can add a raspberry balsamic glaze, which really gives this a huge blast of flavor.  Peach Caprese Salad We've had a bumper crop of basil this summer as well, so I've been adding it to so many things! And the scent of fresh-picked basil is so absolutely wonderful - it's great to enjoy it fresh!  Fresh Peach Caprese Salad Grilling fresh fruit on the grill has gotten to be a family favorite over the past few summers. We've been grilling peaches, pineapple, and even watermelon. If you haven't tried this, you need to! Your taste buds will thank you!  Peach Caprese Salad This is the ultimate summer meal, ready in just a few minutes. Layers of fresh mozzarella cheese, layered with sweet and juicy peach slices, thick-cut slices of red ripe tomatoes, fresh basil leaves, and a light drizzle of balsamic - I'm in heaven!
