This is another one of those dishes that is just so stinkin' easy to make! The marinade and glaze whisks together in mere minutes - I just need to remember to do it in time so that my chicken can marinade for 2 to 4 hours. With fresh pineapple juice and the most perfect spices, you won't believe how tender and juicy this chicken is! We're between storms right now, so it's the perfect time to grill the chicken breasts and fresh sliced pineapple. When grilled, the pineapple caramelizes and develops the most incredible flavor! Paired with the marinated chicken and some fresh jewel rice, all that's left to do is drizzle some extra glaze over everything. Not just a teriyaki flavor, the fresh pineapple juice and Asian sweet chili sauce added to the glaze just kicks the flavor up a delicious notch or two. So good! With any luck there will be a little bit leftover - perfect on a salad for tomorrow! Wishing you calm winds, good memories and wonderful Grilled Brown Sugar Pineapple Chicken this weekend!
